Ramadan Pita Dough Recipe
First, separate 1 tablespoon of eggs while whisking your egg and pouring it into the mixing bowl. Then pour 20gr of sugar and 4gr of instant yeast into a bowl and start mixing. Then add 200 g of bread flour, 3 g of salt and 80 ml of warm milk and continue mixing. You can start kneading by hand after the ingredients are combined with each other. After your dough is sticky, it will be good to take a break for 10 minutes.
Take your kneaded dough to a place where you can open it easily and knead it with your hand with the unsalted butter you prepared before and ensure that your butter mixes well with the dough. Since butter prevents gluten formation, it needs to be added later. Knead well until homogeneous. After the dough is smooth, if you want your pita to be softer, you can knead it for a few more minutes. Fold the edges in to make the dough round. Then put the dough on a baking tray and ferment for 1 hour at 30°C.
Preparation of the Sauce
Add 13 g of unsalted butter, 1 tablespoon of egg, 1 teaspoon of sugar, 1 teaspoon of mayonnaise, chopped green onion that you prepared before into a bowl, and mix well with the help of a spoon. After mixing, add 1 teaspoon of minced garlic and mix again.
Making Ramadan Pita
Take out your dough that you have fermented in the oven and press it with your hand so that the gas in the dough comes out. Then you can give a pita pattern with a knife or with your hand, if you can’t do it by hand, with the help of a knife, make slightly deep scratches from the length of the dough. Do the same to the right and left.
